Sour Dough Update

So we have been feeding the sourdough over the last week and decided to try out some bread, so I googled recipes and found one that I could complete today. This one had a 3 hour bread rise instead of the 12 plus hour rise time that I have been finding. The plan originally was to make it on Saturday, but Friday we ran into strep throat and spent 2 plus hours at the urgent care, and then waited about another hour for the culture to come back positive. By the time I got home from the pharmacy, it was 10pm. I was so wiped out that I forgot to feed the starter. So I decided to feed it on Saturday which caused it to rise to the point of over flowing out of the jar.

I thought that is a great sign, the yeast are farting up a storm. I cleaned it up the best i could and let it finish its thing over night. We had make up swim lessons today since we missed Friday’s, and I thought it would be a great time to start the sour dough bread. I made the recipe I found with the 3 hour rise time. I will not share this because it was a total Fail!!! After the three hours of rise time, it defiantly grew in size but it was very dense and didn’t have the distinct taste of sour dough that we expected. So either, the starter was not as good as I anticipated or the bread recipe was not a good recipe or possibly just because of the short rise time.

I will have to try this again next week with a different recipe. I will probably pull a few and make it my own. This will also allow me to keep adding to the starter and hopefully help with the sour taste of sour dough bread. We love bread in our house and there is nothing better then freshly baked bread. Fingers crossed that all goes well next week.
